This is the Geisha personally processed by Sherry during our visit to Baoshan, Yunnan!

Zuoyuan is currently the only benchmark estate in Yunnan solely dedicated to large-scale, single-varietal Geisha cultivation.

We specifically targeted the highest-altitude plots within the estate. Nestled under the shade of lush coffee trees, we meticulously hand-picked only the latest-ripening, deep-purple coffee cherries right when their sweetness reached its absolute peak.

The dramatic diurnal temperature variation brought by the shade endows this Gesha batch with exceptionally high-quality organic acids and a dense, rich sweetness. During the post-harvest fermentation stage, Sherry utilized a specific natural mineral water rich in elements that enhance the fermentation process. At precise concentrations, these minerals worked in perfect synergy with the yeast, drastically elevating the complexity and structural depth of the flavor profile. Afterward, the coffee beans were transferred to a completely dark room for low-temperature, slow drying. By deliberately extending the dehydration cycle, the flavor molecules were gently and gradually locked into the very core of the bean!
