Estate Background & Characteristics
Geographical Location: Located in the Huila region of Colombia, situated at an elevation of approximately 1,550 to 2,100 meters above sea level. The high altitude creates significant day-night temperature swings, promoting slow cherry maturation and exceptional nutrient accumulation.
Producer: Managed by third-generation coffee farmer Edilberto Vergara. In 2017, he extensively upgraded the estate's infrastructure, successfully transitioning traditional production toward specialty coffee.
World-Class Reputation: Renowned for its extraordinary, vibrant floral and fruity flavor profile, coffees from this estate are frequently chosen by competitors as competition lots in the World Barista Championship (WBC).
Sugarcane EA Decaffeination Process Mechanism, Steps & Flavor Profile
A natural, non-toxic technology that uses ethyl acetate (EA) extracted from fermented sugarcane to remove caffeine from green coffee beans.
EA Source: Ethyl acetate is a naturally occurring organic compound widely found in fruits (such as bananas and apples). In origin countries like Colombia, it is typically derived directly as a byproduct of sugarcane fermentation during sugar production.
Extraction & Soaking: The green coffee beans are first steamed under low pressure to swell the beans and open their pores. They are then soaked in an EA-water solution, where the EA selectively binds to and extracts the caffeine molecules.
Residue Removal & Drying: The beans undergo a low-temperature steaming phase once more to strip away any remaining EA (yielding residual levels well within strict, safe regulatory limits). Finally, the beans are cooled, dried, and polished.
Preserving Sweetness: Compared to traditional chemical solvent processes or certain water-decaffeination methods, the Sugarcane EA process exceptionally preserves the coffee's original specialty character while imparting distinct notes of sugarcane, caramel, and ripe fruit.
Rich Mouthfeel: Delivers a full-bodied, satisfying sweetness that minimizes the bitterness and flat flavor profile often associated with decaf coffee, making it a leading processing method in today's specialty decaf market.
